Traning system: Guyot from 90 years old vines
Harvest: Hand-picked in September.
Yield: 7 tons/ha
Vinification: this is a special procedure that begins with a gentle pressing and cleaning of the must at chilled temperatures before fermentation. Fermentation takes place under constantly controlled low temperature, not exceeding 16°C.
Conservation and refinement: then take place in steel vats for about 6 months.
Flavour characteristics: a lively straw-yellow colour with pale greenish reflections. This wine has a complex bouquet with hints of fruit and flowers. The palate is full, soft and harmonious.
Food pairing: well suited to first courses, grilled vegetables and fresh cheese, exceptional with roasted pork, codfish and pecorino cheese with fava beans
Service temperature: 10-12°C
Alcohol: 13,5% vol.
